Introduction:- 

The history of the New York Cheese cake first beings with a history lesson about the product known as cheesecake itself. It is believed the first cheesecake came from the Greek as anthropologists excavated cheese molds on Samos Island that has an origin date as far back as 2,000B.C. By 1912, James Kraft developed a method to pasteurize the cheese & by the 1920s it became very popular in New York.Smooth consistency make it unique in texture. Today each restaurant has a unique version of New York cheese cake.

Recipe :-

#Base of cake

crushed Digestive Biscuits:- 150gm

melted Butter:- 80-90gm

#Cream of cake

Cream cheese :-600gm

Caster Sugar:- 170gm

Eggs:- 135gm

Vanilla essence :- as per required 

Fresh cream :-118gm

Lemon juice :- 10ml

Lemon Zest :- 1pcs 

Methods 

step1:- prepare the base of the cheese cake in the bakinf pan first & bake it at 120c- 140c for 2mins which gives you better result, whille slicing the cake into the portion.

Step12:-  start mixing cream cheese & caster sugar with the help of paddle.

Step3:- After well mixing of cream cheese & caster sugar, when it looks creamy start adding egg gradually.this whole process also known as creaming method in the pastry term.

Step4:- Now add vanilla & fresh cream into it & mix well.

Step5:- After well mixing add lemon juice & lemon zest.

Step6:- pour the cheese cake mixer into the baking pan, which we have made alredy ready with the biscuits base. Now baked it at 120c into the preheated oven for 45mins to 1 hour. don’t forget to use steam 30-40% steam while baking. which enhance the texture of the cake.

Step7:- cool it down put into the refrigerator of over nigt. next day, cut into the portion, do the plating as you want& enjoy….
